Ingredients

16 oz. imported Parmesan cheese
16 oz. plain bread crumbs
6 large eggs
2 qt. chicken broth
Preparation

Mix cheese, bread crumbs and eggs.
Form large balls with this mixture.
Press each ball through a pasta maker.
The holes in the pasta maker should be 1/2-inch in diameter.
Spread noodles on trays overnight to dry.
Bring chicken broth to a boil.
Drop in noodles and simmer for 20 minutes, stirring frequently.
Serve with additional cheese on the side to sprinkle on soup.
Serves 15.
