Cherry Pudding Cake - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 1/2 c. sugar, divided
    4 tsp. baking powder
    1 c. milk
    2 Tbsp. vegetable oil
    2 (14 1/2 oz.) cans water-packed pitted tart red cherries, well drained
    2 to 3 drops red food coloring (optional)
    1/8 tsp. almond extract
    whipped cream or ice cream (optional)
Preparation
    In a mixing bowl, combine flour, 1 cup of sugar, baking powder, milk and oil. Pour into a greased shallow 3-quart baking dish.
