Blueberry-Banana Bread - cooking recipe
Ingredients

1 c. fresh blueberries
1 3/4 c. all-purpose flour, divided
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 c. unsalted margarine, softened
1/4 c. plus 2 Tbsp. sugar
2 eggs
1 c. mashed, ripe bananas
vegetable cooking spray
Preparation

Toss blueberries with 2 tablespoons flour; set aside.
Combine remaining flour, baking powder, soda, salt and nutmeg in a small bowl.
Cream margarine in a large bowl; gradually add sugar, beating at medium speed of electric mixer.
Add eggs, one at a time, beating well after each addition.
Add flour mixture alternately with mashed bananas, beginning and ending with flour mixture.
Mix just until dry ingredients are moistened.
Gently fold in reserved blueberries.
