Smothered Chicken - cooking recipe

Ingredients
    4 slices fatback
    2 to 3 lb. cut up fryer
    1/3 c. flour
    1 1/2 c. water
    1 medium onion, chopped
    1 tsp. salt
    1/4 tsp. pepper
Preparation
    Fry fatback in large frypan; remove.
    Add fryer; brown on all sides.
    Sprinkle with flour, coating and browning both sides. Stir in water slowly; sprinkle with onion, salt and pepper.
    Bring to a boil.
    Cover with tight fitting lid and cook on medium-low heat until gravy boils 10 minutes.
    Reduce to low heat; cover. Simmer 15 to 20 minutes or until chicken is done.
