Pasta Fagioli - cooking recipe
Ingredients

1 large onion, chopped
2 ribs celery, chopped
2 cloves garlic, minced
3 Tbsp. oil
1 (14 oz.) can crushed tomatoes
3 1/2 c. water
1 tsp. salt (optional)
1/2 tsp. pepper
1 (19 oz.) can white Northern beans
1/2 c. ditalini pasta (dry)
1/4 c. fresh parsley
Preparation

Saute onion, celery, garlic and oil in a large pot.
Cook until tender, about 10 minutes. Add tomatoes, water, salt and pepper. Cover and simmer 20 minutes. Add beans, pasta and parsley. Cover and cook until pasta is tender. Serve in soup bowls and sprinkle with Parmesan cheese. Serve with Italian crust bread and a big green salad.
