Chinese New Year Rice - cooking recipe

Ingredients
    3 Tbsp. vegetable oil
    1 lb. boneless chicken breasts, cut into bite size pieces
    3 1/2 c. chilled, cooked rice
    3 green onions, sliced
    1 stalk celery, sliced diagonally
    1 small carrot, shredded
    1 to 2 Tbsp. soy sauce
    1/8 tsp. black pepper
Preparation
    Heat oil in large skillet or wok over medium-high heat.
    Add chicken; cook and stir until lightly browned.
    Add remaining ingredients; cook and stir until heated through.
    Makes 6 servings.
