Okra And Tomatoes - cooking recipe
Ingredients

4 slices bacon
1 medium chopped onion
1 1/2 lb. fresh okra, sliced
4 medium ripe tomatoes, chopped
salt and pepper to taste
parsley, chopped
Preparation

Fry bacon until crisp in large skillet.
Remove bacon to drain on paper towel.
Saute onions in hot bacon grease for about 3 minutes.
Add sliced okra and cook, stirring occasionally, until most of the ropiness is gone, 10 minutes.
Add tomatoes, salt and pepper.
Cover and simmer for about 45 minutes.
If necessary, add a little tomato juice or water while simmering.
Ten minutes before done, crumble bacon into mixture and finish cooking, covered.
Sprinkle with parsley.
