Squash Croquettes - cooking recipe
Ingredients

2 lb. squash
2 c. fine bread crumbs
2 eggs
1 tsp. black pepper
1 large onion, grated
1 c. corn meal
2 tsp. salt
Preparation

Cook squash and onions until tender.
Drain well.
Mash and mix with bread crumbs, eggs, salt and pepper.
Form into balls and roll in corn meal.
Deep fry in oil until brown.
