Candied Grapefruit Peel - cooking recipe

Ingredients
    peel of 4 to 5 grapefruit
    sugar
    food coloring (optional)
Preparation
    Cut grapefruit peel into desired shapes and sizes of triangles. Place in large cooking pot and cover with cold water.
    Bring to a boil and boil for 20 minutes; drain.
    Return the grapefruit to pot and cover with hot water.
    Bring to boil and boil 20 minutes. Drain and return to pot.
    Cover with hot water; bring to a boil and boil for 20 minutes.
    Drain.
    Weigh the hot grapefruit and add an equal weight of sugar.
    If using color, add now.
    Stir well and cook over medium heat to medium-high until liquid is absorbed.
    Be careful near end.
    Roll in sugar and put on rack to cool and dry. Store with wax paper between layers.
