Chicken Cacciatore - cooking recipe
Ingredients

1 (27 1/2 oz.) jar low-fat pasta sauce
1/2 c. Burgundy or other dry red wine
1 medium size green pepper, cut into 1-inch pieces
1 small onion, cut into 1-inch pieces
6 to 8 chicken breasts, cut in bite sized pieces
1 tsp. dried Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
6 c. cooked fettuccine or egg noodles, cooked without salt or fat
Preparation

Combine first 4 ingredients in a large Dutch oven, stirring well.
Add chicken.
Bring to a boil.
Cover, reduce heat and simmer 1 hour or until chicken is tender.
Add Italian seasoning, salt and pepper to sauce.
Cook, uncovered, over medium heat 15 minutes, stirring frequently.
Serve over fettucine or egg noodles.
Yields 6 servings (397 calories per serving).
