Zucchini Frittata - cooking recipe

Ingredients
    1 medium onion, chopped
    1 medium zucchini, chopped
    1 c. cooked potatoes, cut up
    6 eggs, beaten
    1/4 c. Locatelli or Parmesan cheese
    2 tsp. margarine
    1 tsp. chopped parsley
    salt and pepper
Preparation
    Saute onion in margarine until transparent.
    Add zucchini and potatoes.
    Cook until zucchini is soft.
    Mix cheese into eggs, gently pour into pan.
    Cook slowly, about 10 minutes or until bottom is slightly brown.
    Place plate over pan and flip frittata onto plate.
    Slide back into pan and cook until brown.
    Sprinkle with salt, pepper and parsley.
    Serves 4.
