Turkey Rice Soup - cooking recipe

Ingredients
    2 turkey legs
    3/4 c. diced carrots
    3 ribs celery, diced
    3/4 c. diced onion
    1 Tbsp. parsley
    1 c. Minute rice
Preparation
    Boil turkey legs in salt water until tender.
    Remove the meat and add water to make 3 to 4 cups broth.
    Bring to simmer with carrots, celery, onion and parsley.
    Simmer 20 minutes. Add water, if needed, to make at least 1 quart liquid.
    Add 1 cup Minute rice and meat from turkey legs.
