Partridge Fillet - cooking recipe

Ingredients
    partridge breast meat
    1/4 c. butter
    1 Tbsp. lemon juice
    very fine bread crumbs
    1 egg, beaten
    deep fat
Preparation
    Cut finer sized pieces of the partridge breast.
    Melt butter and add the lemon juice.
    Dip the partridge pieces in the butter mixture and spread out on a plate and let set for a few minutes. Roll the pieces in the bread crumbs.
    Dip the pieces in the egg and roll in crumbs again.
    Fry in fat until done, about 5 minutes.
