Pork And Mashed Potato Casserole - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless pork, cut into 1/2-inch thick pieces
    2 carrots, sliced
    2 stalks celery, chopped
    1 medium onion, chopped
    2 1/2 c. sliced mushrooms
    3/4 c. chicken broth
    1 tsp. dried thyme
    1 Tbsp. white vinegar
    1/4 tsp. pepper
    1/2 c. apple juice
    1/4 c. flour
    2 c. hot mashed potatoes
Preparation
    Heat oven to 375\u00b0.
    Heat oil in 3-quart saucepan over medium heat until hot.
    Cook pork in oil about 6 minutes, until brown. Stir in carrots, celery, onion, mushrooms, broth, thyme, vinegar, salt and pepper.
    Heat to boiling.
    Shake apple juice and flour in tightly covered container.
    Gradually stir into pork mixture. Heat to boiling, stirring constantly.
    Boil and stir one minute. Spoon mixture into 2-quart casserole.
    Cover and bake 45 to 50 minutes.
    Spoon mashed potatoes around edges and bake uncovered 15 to 20 minutes.
    Makes 4 servings.
