Chicken Soup With Papaya - cooking recipe

Ingredients
    2 1/2 lb. chicken pieces
    dash of pepper
    1 small piece ginger root, crushed
    2 (14 1/2 oz.) cans chicken broth
    1 green papaya, pared and seeded
    salt and pepper to taste
    1 tsp. salt
    3 Tbsp. salad oil
    1 onion, sliced
    2 c. water
    4 c. arugula or mustard greens, if desired
Preparation
    In large saucepot, heat oil and brown chicken.
    Add ginger and onion; cook until onion is transparent.
    Add broth and water. Cover and simmer for 1 hour.
    Cut papaya into 2 x 1/2-inch pieces. Put into soup and cook 5 to 10 minutes or until papaya is tender. Add greens; turn off heat and let stand for 2 minutes.
    Makes 6 servings.
