Mini Cheesecakes - cooking recipe

Ingredients
    12 vanilla wafers
    1/2 c. sugar
    1 tsp. vanilla
    dash of salt
    2 (8 oz.) pkg. softened cream cheese
    2 eggs, at room temperature
    couple drops lemon juice
Preparation
    Line mini muffin tin with foil liners.
    Place 1 vanilla wafer in each liner.
    Mix cream cheese, vanilla, lemon juice, salt and sugar on medium speed until well blended.
    Add eggs; mix well. Pour over wafers, filling 3/4 full.
