Caroline'S Bulgar Salad - cooking recipe

Ingredients
    1 c. bulgar (cracked wheat)
    4 c. boiling water
    1/2 c. chopped cilantro
    1/4 c. chopped or 2 Tbsp. dried mint
    4 green onions, chopped
    1 (12 to 20 oz.) can garbanzo beans
    4 oz. Feta cheese
    3 to 4 tomatoes, chopped (if desired)
Preparation
    Soak bulgar in boiling water for 15 to 20 minutes.
    Drain well.
    Add rest of the ingredients, mixing thoroughly.
    Whisk dressing, pour over salad and toss; cover and refrigerate for at least 1 hour or preferably overnight.
    May also add tomatoes (chopped).
