Crabby Burgers - cooking recipe

Ingredients
    2 lb. backfin crabmeat
    2/3 c. dry fine bread crumbs
    2/3 c. mayonnaise
    1 egg, well beaten
    2 Tbsp. horseradish
    1 small onion, minced
    1 small green pepper, minced
    1 small stalk celery, minced
    1 tsp. salt
    4 c. corn oil
    generous sprinkling freshly ground black pepper
Preparation
    Mix all ingredients, except oil, in a bowl.
    Toss mixture lightly, but well to blend thoroughly.
    Heat corn oil in a large heavy skillet or Dutch oven.
    (A piece of bread dropped into the oil will turn golden brown when the temperature of the oil is just right.)
    Form crabmeat in 12 patties, approximately 1/2-inch thick.
    Fry crab patties until golden brown, 6 to 8 minutes. Remove crab patties from skillet with tongs and dry on absorbent paper.
    Serve immediately.
    Serves 4 to 6.
