Quail With Aunt Min'S Gravy - cooking recipe

Ingredients
    8 quail
    salt
    freshly ground black pepper
    3 c. ground pecans
    3/4 c. flour
    4 c. peanut oil
    3 c. duck stock or chicken
    1/2 c. heavy cream
Preparation
    Clean and dry quail, then salt and pepper.
    Combine pecans and flour in large bowl; mix well.
    Make an egg wash and beat the egg into milk.
    Dip one quail at a time first into egg wash, then into pecan-flour mixture.
