Potato Pancakes - cooking recipe

Ingredients
    2 large raw potatoes (about 1 lb.)
    1 Tbsp. grated onion
    2 eggs, beaten
    2 Tbsp. flour
    1 1/2 tsp. salt
    pinch of pepper
    melted fat or salad oil
Preparation
    Wash and pare raw potatoes, then grate them on fine grater. Quickly stir in onion, eggs, flour and seasonings.
    Drop from a tablespoon into 1/4-inch hot fat or salad oil in skillet, spreading each cake with the back of a spoon until it is thin.
    Saute to a deep, golden brown on both sides.
    Drain on paper toweling laid in baking pan.
    Makes 8 to 10 pancakes.
