Chicken Marbella - cooking recipe
Ingredients

1 chicken, cut in pieces
1/4 head garlic, peeled and minced
1 Tbsp. oregano
salt and pepper to taste
2 Tbsp. red wine vinegar
2 Tbsp. olive oil
1/4 c. pitted prunes (wet kind in jar or can, not dried)
1/8 c. pitted Spanish green olives (the pimento kind is okay)
1/8 c. capers (with a bit of juice)
1 1/2 bay leaves
1/4 c. brown sugar
1/4 c. white wine
1 Tbsp. Italian parsley, chopped
Preparation

In a large bowl, combine chicken, garlic, oregano, pepper and salt to taste, vinegar, olive oil, prunes, olives, capers and juice and bay leaves. Cover and marinate, refrigerate overnight.
