Chicken Salad - cooking recipe

Ingredients
    5 c. cooked, diced chicken (I use all white meat)
    2 Tbsp. vegetable oil
    2 Tbsp. orange juice
    2 Tbsp. vinegar
    1 tsp. salt
    1 c. slivered almonds
    1 1/2 c. small green grapes
    1 1/2 c. chopped celery
    13 oz. can pineapple tidbits
    1 can mandarin oranges
    1 1/2 c. mayonnaise
    3 c. cooked rice (optional)
Preparation
    Combine the first 5 ingredients and set aside.
    Combine last 7 ingredients and add to the chicken mix and chill.
    Serves 8 people.
