Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant or zucchini
    6 Tbsp. butter
    1/2 c. minced onion
    1 c. shredded Cheddar cheese
    1 c. soft bread crumbs
    1 can mushrooms
    salt and pepper
Preparation
    Cut eggplant in half lengthwise.
    Scoop out and dice.
    Saute in 4 tablespoons butter and cook until tender, stirring often and reserve.
    Melt remaining butter (2 tablespoons).
    Cook onion for 2 minutes.
    Add mushrooms and cook 5 minutes.
    Combine mushroom mixture, eggplant, 1/2 package cheese, bread crumbs, salt and pepper.
    Mix well and sprinkle with remaining cheese.
    Bake 15 to 20 minutes at 375\u00b0.
    May be baked in the eggplant shell.
