Hot Chicken Loaf - cooking recipe

Ingredients
    4 to 5 lb. chicken, cut up
    1 small carrot
    1 small onion
    2 stalks celery
    1 clove
    3 peppercorns
    1 tsp. salt
    2 c. fresh bread crumbs
    1 c. cooked rice
    1 1/3 Tbsp. salt
    2 Tbsp. pimento
    1 1/3 c. chicken broth or milk
    canned meat, chopped
    5 eggs, beaten
Preparation
    Place chicken in large kettle.
    Add carrots, onion, celery, clove, peppercorn and salt.
    Cover with cold water and simmer until tender, about 2 hours.
    Strain stock and let chicken cool in stock.
    When cold, drain, saving stock.
    Discard skin of chicken. Remove meat and bones and dice meat.
