Jambalaya - cooking recipe

Ingredients
    1 large yellow onion, chopped
    1 large garlic clove, minced
    1 large green pepper, chopped
    1 large stalk celery
    1/2 tsp. dried thyme
    2 large bay leaves
    1 tsp. Tabasco sauce
    1 can Ro-Tel (tomatoes)
    2 large cans tomatoes
    1 small can tomato sauce
    1 can rice
    1 large chicken, cooked and cut up
    1 large Polish sausage, sliced
Preparation
    Saute onion, garlic, green pepper and celery in bacon drippings or oil until onion is golden.
    Add thyme and bay leaves; stir well.
    Add Tabasco, Ro-Tel, tomatoes, tomato sauce, 2 cups water, salt and pepper.
    Simmer 5 minutes.
    Add rice; reduce heat. Cook, covered 30 minutes.
    Add chicken and Polish sausage.
    Cook until rice is tender.
    Add more Tabasco if needed.
