N.T.L. Chili - cooking recipe

1 lb. coarse ground beef
1 lb. Italian sausage
2 lb. lean stew beef, small cut
3 cloves fresh garlic
2 green peppers, diced
2 large Vidalia or white onions
3 to 4 large celery stalks, diced
2 large cans whole tomatoes in juice
3/4 c. beer
2 to 3 Tbsp. flour
3 Tbsp. ground cumin
1 Tbsp. \"Frank's\" hot sauce
1 Tbsp. Worcestershire sauce

Preparation

In a Dutch oven, over medium-high heat, brown meats. Add garlic and sprinkle with celery salt, onion salt, lemon pepper and ground cumin.
Drain off most of fat.
Add diced celery, onion and green peppers and beer.
Continue to cook over low heat until onion is white and tender.
Sprinkle generously again with celery salt, onion powder, lemon pepper and coarse ground pepper.
Add 2 tablespoons ground cumin and Worcestershire sauce.
Continue cooking over low heat (10 minutes).
Add canned tomatoes.
Simmer 10 to 20 minutes.
