Twice Baked Potatoes - cooking recipe
Ingredients

4 baking potatoes
2 eggs, separated
4 Tbsp. margarine
4 Tbsp. heavy whipping cream
salt and pepper
3/4 c. Cheddar or Monterey Jack cheese
Preparation

Wash potatoes.
Bake at 375\u00b0 for 1 hour or until tender.
Cut thin slice off top of each potato.
Scoop out pulp.
Put pulp in bowl.
Add egg yolks and stir until smooth.
Add butter and cream. Season to taste with salt and pepper.
Beat egg whites until stiff peaks form.
Fold into potato mixture.
Fill shells with mixture. Sprinkle on cheese.
Bake at 375\u00b0 for 15 minutes.
