Microwave Peanut Brittle - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. white corn syrup
    1 c. roasted and salted peanuts
    1 Tbsp. butter
    1 tsp. vanilla
    1 tsp. baking soda
Preparation
    Stir sugar and corn syrup together in 1 1/2-quart casserole dish.
    Microwave on High for 4 minutes.
    Add peanuts.
    Stir. Microwave on High for 3 to 5 minutes, until light brown.
    Add butter and vanilla.
    Blend well.
    Microwave on High 1 to 2 minutes.
    Add baking soda.
    Stir until light and foamy.
    Spread on buttered cookie sheet.
    Work fast because it hardens quickly.
    If you wish, you can substitute 7 ounces almonds and 1 teaspoon almond extract (for vanilla) or 1 cup pecans or 7 ounces cashews.
