Zucchini-Cranberry Holiday Bread - cooking recipe

Ingredients
    3 c. unsifted all-purpose flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 1/4 tsp. salt
    2 1/2 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1 c. fresh cranberries
    2 c. sugar, divided
    1 1/2 c. shredded, unpeeled raw zucchini (about 2 small)
    1/2 c. chopped nutmeats
    3 eggs
    1 c. salad oil
    3 tsp. vanilla
Preparation
    Preliminaries:
    Generously grease two 9 x 5 x 3-inch loaf pans; set aside.
