Quick Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 c. oil
2 1/4 c. sugar
2 c. peeled and grated zucchini
1 Tbsp. vanilla
3 c. flour
1 tsp. soda
1 tsp. salt
1 1/4 tsp. baking powder
1 Tbsp. cinnamon
1 c. nuts (optional)
Preparation

Beat eggs.
Continue beating and add oil, sugar, zucchini and vanilla.
Sift dry ingredients together and add to first mixture. Fold in nuts if desired.
Spoon into three greased and floured loaf pans.
Bake at 350\u00b0 for one hour.
Cool bread on rack.
Delicious with butter or cheese spread.
Freezes very well.
