New England Baked Beans - cooking recipe

Ingredients
    1 lb. (2 c.) dry navy beans
    1/3 c. brown sugar
    1 tsp. dry mustard
    1/2 c. molasses
    1/4 lb. salt pork, quartered
    1/2 c. chopped onion
Preparation
    Rinse beans; add to 2 quarts cold water.
    Boil and simmer 2 minutes.
    Remove from heat; cover.
    Let stand 1 hour or add beans to water and soak overnight.
    Add 1/2 teaspoon salt to beans and cooking water.
    Bring to boil; reduce heat and simmer until beans are tender, about 1 hour.
    Drain, reserving liquid.
    Combine sugar, molasses, mustard, 1/2 teaspoon salt and 1/8 teaspoon pepper.
    Stir in 2 cups reserved liquid.
    Add mixture to beans, salt pork and onion in 2-quart bean pot or casserole.
    Stir to blend.
    Cover; bake at 300\u00b0 for 3 1/2 to 4 hours.
    Stir occasionally.
    Add more bean liquid or water if needed.
    Serves 6 to 8.
