Eggplant Casserole - cooking recipe

Ingredients
    2 c. or more cooked eggplant
    1/2 c. chopped onion
    1/2 c. chopped bell pepper
    2 eggs, slightly beaten
    1 c. cracker crumbs (not meal)
    1 c. milk
    1 c. sharp Cheddar cheese, shredded
    1 (2 oz.) jar pimentos
    1 tsp. salt
    dash of pepper
    2 Tbsp. butter
Preparation
    Mix and bake 40 minutes at 375\u00b0.
