Turkey Scrapple - cooking recipe

Ingredients
    turkey carcass
    1 to 2 celery stalks and leaves
    1 large onion
    sage, salt and pepper to taste
    cornmeal
Preparation
    Break turkey carcass apart.
    Put in large pan and cover with water.
    Bring to a boil and simmer about 2 hours.
    Cool until you can handle.
    Strip bones off all meat.
    Discard bones.
    To broth, add celery stalks and onion.
    Cook until vegetables are tender. Add sage, salt and pepper.
    Bring to a boil.
    Add turkey bits and meal (much like mush).
    Steam for about 30 minutes.
