Crab Au Gratin - cooking recipe
Ingredients

1/4 c. lemon juice
1/4 tsp. cayenne pepper
1 Tbsp. onion, minced
1 lb. crabmeat, shelled and cartilage removed
1 Tbsp. butter
1 Tbsp. flour
1 c. heavy cream
1/2 c. dry sherry
1 c. sharp cheddar cheese, grated
1 egg yolk beaten

Preparation

Preheat oven to 450\u00b0.
Combine lemon juice, pepper and onion. Toss with crabmeat and set aside.
Melt butter and blend with flour.
Stir in cream and sherry.
Heat and stir until thickened. Add 1/2 cup cheese.
Slowly stir in egg yolk.
Allow to cool slightly before folding in crabmeat.
Pour into well buttered casserole.\tSpread remaining cheese on top.
Sprinkle with paprika.
Bake 15 to 20 minutes until hot and bubbly.
