Pumpkin Muffins - cooking recipe

Ingredients
    1 c. margarine (soft)
    2 3/4 c. sugar
    3 eggs, beaten
    3 c. flour
    1/2 tsp. baking powder
    1 tsp. nutmeg
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. allspice or pumpkin pie spice
    1 tsp. cinnamon
    1 tsp. vanilla
    1 c. chopped nuts
    1 c. raisins
    2 to 3 c. pumpkin
Preparation
    Sift together dry ingredients.
    Mix the vanilla together with the pumpkin, eggs, margarine and sugar.
    Add dry ingredients; mix well.
    Then add raisins and nuts.
    Fill greased muffin pans 2/3 full or use paper cups (much better without).
    Bake at 325\u00b0 for 30 minutes.
    Makes about 2 1/2 dozen muffins.
    Batter can be stored (covered) overnight or up to 2 weeks in fridge.
    Muffins freeze well.
