Banana Bran Muffins - cooking recipe

Ingredients
    1 large egg or Egg Beaters
    3/4 c. packed brown sugar or honey
    1 1/3 c. mashed ripe bananas
    1 1/2 c. whole wheat flour
    1 c. table bran (unprocessed)
    1/2 c. raisins
    1/2 c. chopped walnuts
    1/3 c. vegetable or olive oil
    1 tsp. vanilla
    1 to 2 tsp. banana flavoring
    1/2 tsp. baking soda
    1 tsp. cinnamon
    2 tsp. baking powder
    1/4 tsp. salt
Preparation
    Grease 12 muffin cups or use baking cups.
    Beat egg and sugar together.
    When smooth, beat in bananas, raisins, walnuts, oil, vanilla and banana flavoring.
    Let stand 1 minute.
    Thoroughly mix flour, bran, baking powder, baking soda, cinnamon and salt together.
    Add to the banana mixture; fold in just until ingredients are moistened.
    Divide batter into the muffin cups and bake for 20 to 25 minutes at 400\u00b0 until browned and springy to the touch in the center.
    Turn out onto rack to cool.
