Ann'S Yellow Tail "Matacumbe" - cooking recipe

Ingredients
    4 fillets yellow tail
    4 Tbsp. extra olive oil
    1/4 c. dry white wine
    2 fresh tomatoes, diced
    1 garlic clove, minced
    1 shallot, minced
    1 tsp. fresh basil, chopped
    3 Tbsp. capers
    2 Tbsp. lemon juice
Preparation
    Saute garlic and shallot in olive oil.
    Add wine, lemon juice, capers and fresh basil, stirring constantly, 5 minutes. Add yellow tail and diced tomatoes.
    Cook until fish flakes easily with fork.
