Gingerbread Muffins - cooking recipe
Ingredients

1 c. molasses
1/2 c. firmly packed brown sugar
1/2 c. safflower oil
1 1/4 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1 1/2 tsp. ground ginger
1 c. boiling water
2 c. all-purpose flour, sifted
1 tsp. baking soda
Preparation

Using low speed of electric mixer, blend molasses, brown sugar, oil, cinnamon, ground cloves, nutmeg and ginger. Add boiling water; blend.
Gradually add flour, beat 2 minutes or until smooth.
Dissolve baking soda in 2 tablespoons hot water. Add to batter.
Blend.
Pour into 8-inch square Teflon baking pan or into paper-lined muffin tins.
Bake at 350\u00b0 for 25 to 30 minutes.
