Chicken With Artichokes And Red Peppers - cooking recipe
Ingredients

1 pkg. chicken cutlets
Italian seasoning
salt and pepper
olive oil
1/2 c. sliced onion
1 jar marinated artichokes
1 red pepper, cut into strips
1 can chicken broth
Preparation

Sprinkle chicken with Italian seasoning, salt and pepper.
In a large, nonstick skillet, heat oil (enough to cover thinly the bottom of skillet).
Add chicken.
Saute 1 1/2 minutes per side until lightly browned.
Remove and reserve.
Add onion to skillet and saute briefly.
Stir in artichokes with marinade and pepper strips.
Add chicken broth.
Cook over high heat 6 to 8 minutes until liquid is reduced to a thin sauce.
Reduce heat to low. Return chicken to skillet.
Cook until heated through.
