Hungarian Goulash - cooking recipe

Ingredients
    1/4 c. cooking oil
    1 medium-sized onion, chopped
    2 lb. beef chuck, cut into 1 1/2-inch cubes
    3/4 c. beef stock or bouillon
    2 tsp. paprika
    salt and pepper
    1 c. diced raw potatoes
    1 c. diced raw carrot
    1/4 c. tomato juice
    1 (8 oz.) pkg. wide egg noodles
    1/2 c. sour cream (optional)
Preparation
    In a large skillet, heat cooking oil.
    Saute onion until soft and transparent, but not browned.
    Add beef cubes and brown; add stock, paprika, salt and pepper to taste.
    Cover and reduce heat. Simmer 1 hour; add potatoes, carrot and tomato juice.
    Simmer 30 minutes longer (until beef is tender and vegetables cooked).
