Microwave Spicy Zucchini-Tomato Bake - cooking recipe
Ingredients

3 (16 oz.) cans tomato wedges, drained
3 medium zucchini, sliced
1 small onion, chopped
6 slices bread, crumbled
1/4 c. sugar
1/4 tsp. salt
1/8 tsp. cayenne pepper
4 Tbsp. melted butter or margarine
2 Tbsp. firm butter or margarine
Preparation

Combine all ingredients except firm margarine in a large bowl. Pour into greased 2 1/2-quart casserole. Dot with pieces of remaining butter.
Microwave on High 12 to 14 minutes, rotating dish after 7 minutes of cooking.
When cooked, mixture will set into soft custard and zucchini will be slightly crunchy.
Yields 6 servings.
