Confetti Scalloped Potatoes - cooking recipe
Ingredients

1/2 c. butter
1/2 c. onion, chopped
1 (16 oz.) pkg. frozen hash brown potatoes
1 can cream of mushroom soup
1 soup can milk
1 c. shredded Cheddar cheese
1 small green pepper, stripped
2 Tbsp. chopped pimentos
dash of pepper
1 c. cracker crumbs
Preparation

In a skillet, melt butter over medium heat.
Saute onion until tender.
Stir in soup, potatoes and milk.
Add cheese, green pepper, pimentos, pepper and 1/2 cup cracker crumbs.
Pour into a shallow baking dish and top with remaining crumbs.
Bake at 375\u00b0 for 35 to 40 minutes.
