Szechwan Peanut Chicken - cooking recipe

Ingredients
    2 whole chicken breasts, boned, skinned and cut into 1-inch pieces
    4 tsp. soy sauce
    1 clove garlic, minced
    2 tsp. finely shredded fresh ginger
    1 Tbsp. peanut or vegetable oil
    1 small red pepper, cut into 3/4-inch pieces
    1/2 c. picante sauce
    2 Tbsp. creamy peanut butter
    3 green onions, cut diagonally into 1/2-inch pieces
    hot, cooked rice
    1/4 c. coarsely chopped peanuts
Preparation
    Combine chicken, soy sauce, garlic and ginger; set aside 10 minutes.
    Heat oil in 10-inch skillet over medium-high heat.
    Cook chicken mixture in oil until no longer pink, about 3 minutes.
    Add red pepper, picante sauce and peanut butter.
    Cook and stir 4 minutes.
    Add green onions; heat through.
