Zucchini Italiano - cooking recipe
Ingredients

6 small zucchini, cut 1/4-inch
1/2 c. chopped onion
1/4 c. chopped green pepper
15 oz. tomato sauce
3/4 tsp. basil
1/2 tsp. oregano
2 hard-cooked eggs
6 oz. Mozzarella cheese
1/4 tsp. salt
6 slices bacon, cooked, drained and crumbled
2 Tbsp. oleo
Preparation

Cook zucchini in a large saucepan, covered with boiling salted water until crisp and tender (5 minutes).
Drain well.
Saute onion and green pepper in oleo until tender.
Stir in sauce and spices. Heat through.
Separate egg yolk and white.
Chop white.
Add zucchini.
Use 11 x 7 1/2 x 1 1/2 inch dish.
Line with a little sauce, layer of zucchini, 1/2 of sauce, cheese, 1/2 of sauce and bacon.
Bake at 350\u00b0 for 15 minutes.
