Caribbean Corn Relish - cooking recipe

Ingredients
    8 ears or 4 c. frozen corn
    1 1/2 c. red pepper, chopped
    1 c. onion, chopped
    1 c. jicama, chopped
    3/4 c. sugar
    3/4 c. vinegar
    1 tsp. finely shredded lime peel
    1/3 c. lime juice
    1 tsp. celery seed
    3/4 tsp. ginger
    1/2 tsp. crushed red pepper
    2 Tbsp. cornstarch
    1 tsp. salt
Preparation
    Combine corn and 1 cup water. Bring to a boil. Simmer 12 minutes (covered). Add everything but cornstarch.
    Simmer, uncovered, 5 minutes. Stir in cornstarch and 1/4 cup cold water. Cook and stir until thick and bubbly.
    Cook 2 minutes.
    Put in hot jars.
    Seal.
    Process 15 minutes in hot water bath.
    Makes about 6 1/2 pints.
