Jamaican Meat Pies - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1 medium onion, chopped
1 green bell pepper, chopped
2 garlic cloves, crushed
1 lb. ground chuck
1 c. tomato sauce
1 Tbsp. hot pepper sauce
1 Tbsp. tomato puree
2 tsp. curry powder, plus additional for sprinkling
1 c. cold mashed potatoes (leftover or boiled and mashed)
salt and freshly ground black pepper to taste
Preparation

To make the filling, heat the oil in a large skillet.
Add the onion, bell pepper and garlic.
Saute until the onion is translucent, but not browned, about 5 minutes.
Add the ground meat and saute until browned, breaking it into small pieces with your spatula.
Add the tomato sauce, tomato puree and hot pepper sauce; simmer 10 minutes.
Add the curry powder to the potatoes and stir the potatoes into the sauce to thicken it.
Add salt and pepper.
Taste the sauce and correct seasonings.
Cool.
If working ahead, cover and refrigerate filling.
