Tex-Mex Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. ground turkey or chicken breast
    3 slices fat-free bread, torn in small pieces
    1 egg or 2 egg whites
    1 can Ro-Tel diced tomatoes and green chilies
    1 small onion, chopped
    1 tsp. chili powder
    1/4 tsp. black pepper
    1/3 c. chili sauce
    1/4 c. fat-free Cheddar cheese, shredded or lay slices of Borden fat-free American cheese on top (it melts)
Preparation
    Combine all but chili sauce and cheese.
    Spread in ungreased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
    Bake one hour, covered.
    Spoon chili sauce over cooked loaf and cover with cheese.
    Bake an additional 15 minutes in 350\u00b0 oven.
