Shrimp Creole - cooking recipe
Ingredients

2 Tbsp. butter or margarine
1 medium onion
1 medium green pepper
2 (14 1/2 oz.) cans stewed tomatoes
1 (6 oz.) can tomato paste
1/2 tsp. salt
pepper to taste
1/8 tsp. cayenne pepper or to taste
5 to 6 drops Tabasco or to taste
2 c. cooked shrimp
3 c. rice, cooked
Preparation

Cut onion and green pepper into large slices or strips.
Saute both in butter or margarine over medium heat until tender.
Add stewed tomatoes and tomato paste.
Simmer over low heat for 10 to 15 minutes.
Add spices to taste.
Simmer for 5 more minutes. Drain and clean cooked shrimp and add to tomato mixture; just heat through.
Serve over cooked rice.
Yields 6 servings.
