Lemon Chicken - cooking recipe

Ingredients
    1 lb. skinned, boned chicken breasts, cut into strips
    1 medium onion, chopped
    2 garlic cloves, crushed
    2 Tbsp. margarine
    1 Tbsp. cornstarch
    1 large carrot, diced thinly
    2 Tbsp. fresh lemon juice
    1/2 tsp. salt
    1 c. frozen peas
    1 1/2 c. dry instant rice
    1 regular can chicken broth
Preparation
    Saute chicken, onion and garlic in margarine until chicken is lightly browned, about 5 minutes.
    Stir in cornstarch; cook 1 minute longer.
    Add broth, carrot, lemon juice, peas and salt; boil 5 minutes.
    Stir in rice.
    Cover and remove from heat.
    Let stand 5 minutes.
    Fluff with fork.
    Serve with lemon wedges. Serves 4.
