Enchilada Sauce - cooking recipe

Ingredients
    1 1/2 oz. Gebhardt chili powder
    1 tsp. salt
    1 tsp. sugar
    2 qt. water
Preparation
    Heat 2 tablespoons of oil in iron skillet.
    In a small bowl, put chili powder, salt and sugar.
    Add 1/2 cup of water to make paste.
    Fry paste in hot oil.
    Immediately add remaining water to skillet.
    Bring to a boil; then simmer.
    Dip corn tortillas in sauce until tender.
    Fill with cheese and onions.
    Roll.
    Stack in a long pan; alternate with cheese and onion.
    Pour sauce over top. Cover with foil and heat in a hot 400\u00b0 oven for 10 minutes.
    Makes 3 dozen.
